NONO MEATLOAF

INGREDIENTS

    • 1 1/2 lb
    • Ground chuck, 80% lean 20% fat
    • 1/2 lb
    • Ground pork
    • 1 cup
    • Panko bread crumbs (or substitute 3/4 cup fine Italian style breadcrumbs)

    • Eggs (large), whisked
    • 1 cup
    • Green bell pepper, diced
    • 1 cup
    • Yellow onion, diced
    • 2 tsp
    • Garlic, minced
    • 1 tbsp.
    • Olive oil
    • 1/4 cup
    • Heavy cream
    • 1 tbsp.
    • Soy sauce
    • 1 tbsp.
    • Worcestershire sauce
    • 2 tbsp. + 2 tsp
    • NONO seasoning (or BBQ spice)
    • 1 tsp
    • Kosher salt
    • 1 tsp
    • Black pepper, ground
    • 5 tbsp.
    • NONO SAUCE

RECIPE

  1. Preheat a conventional oven to 350°F.
  2. In a medium size sauté pan over medium to high heat, cook peppers and onions in oil until softened. Allow to cool.
  3. In a medium size mixing bowl gently whisk eggs and cream, 1/4 cup NONO SAUCE, seasonings, soy sauce, and Worcestershire until combined.
  4. Pour cream mixture over bread crumbs to slightly moisten.
  5. In a large mixing bowl mix ground beef and sautéed vegetables until combined.
  6. Pour breadcrumb mixture over meat and vegetables, mix by hand to incorporate all ingredients.
  7. Spray a 9x5 loaf pan with non-stick spray, place meatloaf mixture into pan patting firmly into an even layer. Firmly tap pan on counter top to remove air pockets.
  8. Place in middle rack of oven and bake at 350°F for 45 - 55 minutes or until 165’F internal temp. Remove from oven.
  9. Brush top of meatloaf with remaining NONO SAUCE and place back in oven set to broil for 7 - 8 minutes or until caramelized.
  10. Allow meatloaf to cool slightly and slice into 1 inch thick slices.
